Our Favorite Comfort Food- Vegan Chili Recipe
As the season changes, there is one food that never changes. Chili. You can eat it year round and its healthy. I am always encouraged to see the fresh variety of fall vegetables available. Preparing for the any season with foods is easier than it sounds and it's the way to go when preparing for a large family. My family and I always start the season off with this vegan chili. Its light, refreshing, and it will keep you full and energized. With preparing and cooking under 45 minutes, this quick and easy recipe will become an instant family favorite!
Here is what you will need:
2 15.5 oz cans Pinto Beans
1 15 oz. can of Italian diced tomatoes
1 cup of vegetable broth
1 tablespoon chili powder
1 tablespoon cilantro, chopped
1 tablespoon minced garlic
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon paprika
2 bell peppers, chopped
1 teaspoon cumin
1 teaspoon salt
Directions: Mix all the ingredients together in a heavy pot on medium heat. Cook until vegetables are tender. Bring to a boil and let it simmer for 5 to 10 minutes. Remove from heat. We like serve this chili over cilantro lime rice. You can add or change as many vegetables as you want. If rice is not an option for you, you can eat with crackers or cornbread. For additional options, you can serve with cheese, avocado, guacamole, or sour cream. For meat lovers, add your favorite meats such as ground beef, lamb, or turkey for a heartier meal.
